Models are loaded into your PC's memory when the game is running, and because you have full access to your PC unlike on consoles, you can use other programs on your computer to access the game's memory and in turn the models. For other games and games that run on PC in emulators there's NinjaRipper. Unreal engine games pretty much use the same storage format, which is why extraction works for all of them. Gildor's UEViewer/Umodel pretty much extracts every Unreal engine game and gets updated frequently. Ripping PC games is way easier to the point where you don't even need to have much technical knowledge. You can see some nerds have a go at the Beyond Two Souls file format on this page, but as you can tell, it's tough subject matter. It's very tedious and time consuming, which is why few people with the knowledge actually attempt it. Anyone who would want to get the models embedded inside would have to painstakingly interpret the binary files manually. For extracting the game files from the disk that really doesn't make a difference as the games contain mostly binary files that aren't much different on any platform. The PS3 runs a custom, UNIX-like system and the Xbox 360 runs a PowerPC based custom operating system that implements certain Windows API. It requires a substantial understanding of computer sciences, a lot of effort and a ton of time. And unless you already have tools for the specific engine they're using, that is the hardest part. Once you have access to the disk, you have to reverse engineer their file system. There's not really a difference between extracting from 360 or PS3.
